Grease and flour loaf pan.&lt;br /&gt;&lt;br /&gt;Mix butter, sugar, and lemon extract in a good sized bowl. Beat eggs into this mixture. In another bowl, mix flour with baking powder and salt. Add dry ingredients to wet mixture gradually, alternating with milk. Beat just until blended. If desired, blend in rind and nuts. Pour batter into prepared pan. Bread is done when toothpick inserted in middle comes out clean (about 50 minutes or so). After cooling for ten minutes, remove from pan, put loaf on top of foil, and drizzle with reserved Lemon Pour mixture. I discovered it on my computer last week and made them tonight. So glad that we have rediscovered this!! :)&lt;/span&gt;&lt;/i&gt;&lt;br /&gt;&lt;i&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/i&gt;&lt;b&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;Ingredients:&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;12 6-inch flour tortillas &lt;span class="Apple-style-span" style="font-size: x-small;"&gt;(the recipe says 12, but we were able to make 15)&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;2 c. finely shredded Monterey Jack cheese (8 oz)&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;1-1/2 cup shredded cooked chicken&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;1-1/2 tsp. ground cumin&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;2/3 cup salsa&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;8 tsp. vegetable oil&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;&lt;b&gt;Instructions:&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Verdana, sans-serif;"&gt;Heat tortillas as directed on package. Top each with 1 Tbsp. salsa. Roll up tightly; secure each with toothpick. They were a hit with us... even with those of us, myself included, who normally wouldn't touch a pepper or a zucchini with a ten-foot pole!&amp;nbsp;&lt;/span&gt;&lt;/i&gt;&lt;br /&gt;&lt;i&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt; &lt;/span&gt;&lt;/i&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;&lt;b&gt;Ingredients:&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;3/4 c. Lawry's Teriyaki Marinade with Pineapple Juice, divided&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;2 zucchini, cut into 1/2-inch cubes&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;1 or 2 (I used two) red or green bell pepper(s), cut into 1-inch pieces&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;1 8-oz. can pineapple slices, drained and cut into 1-inch pieces&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;&lt;b&gt;Instructions:&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;Place chicken and vegetables* in large resealable plastic bag or glass dish. Add 1/2 cup of the marinade; turn to coat well. Reserve remaining marinade for brushing.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;&lt;b&gt; &lt;/b&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;Refrigerate 30 minutes (or longer for extra flavor). Remove chicken and vegetables* from marinade. Discard any remaining marinade. Alternately thread chicken, vegetables, and pineapple onto eight skewers.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;Grill kabobs over medium heat 10-15 minutes (I think it took longer than this), or until chicken is cooked through and vegetables are tender, turning occasionally and brushing with reserved marinade.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt; &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;*The recipe said to marinade the chicken and the vegetables, but didn't mention the pineapple, so I didn't. But I'm not so sure that it would have hurt anything!&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;Note: If using wooden skewers, soak in water for at least 30 minutes to prevent burning. We all liked this one!&amp;nbsp; I have no idea why it has this "Cozy Cabin Casserole" name, because it's certainly not a casserole. It's very similar to this &lt;a href="http://morethannecessaryfood.blogspot.com/2010/03/crockpot-beefy-noodles.html"&gt;Beef and Noodles recipe&lt;/a&gt;. I think you could easily serve it on noodles as a beef stroganoff type meal. My plan was to serve it on top of mashed potatoes (since there's quite a bit of gravy in it), but we ended up having it with baked potatoes instead.&lt;/span&gt;&lt;/i&gt;&lt;br /&gt;&lt;br /&gt;&lt;i&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;&lt;b&gt;Ingredients:&lt;/b&gt;&lt;/span&gt;&lt;/i&gt;&lt;br /&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;2 lb. lean round steak (I used beef stew meat instead)&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;2 1.1-oz envelopes dry beefy onion soup mix&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;1 can cream of mushroom soup&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;1 can cream of celery soup&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;1/2 cup sour cream&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;&lt;i&gt;&lt;b&gt;Instructions:&lt;/b&gt;&lt;/i&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Layer first four ingredients in slow cooker. Pour rice into slow cooker. Add chicken broth and salsa. Stir together well. &lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;Heat a large non-stick skillet over medium-high heat. Add oil to skillet and brown chicken 2 to 3 minutes per side. Place chicken breasts on top of salsa mixture in slow cooker.&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;&lt;/span&gt;&lt;span style="font-family: Verdana,sans-serif;"&gt;Cover and cook on low 4-6 hours or until chicken and rice are tender. I followed the directions exactly, and ended up with a thick layer of burnt cheese on the top.  I ended up having to take that layer off, donate it to the trash can, and then add another layer of cheese and just put it into the oven long enough for it to melt. The ONLY good thing about a sore throat is that it gives me the opportunity to drink hot South Dakota Tea! But this is a good hot drink even if you don't have a sore throat, and it has a great orange/clove scent, which is one of my favorite cold weather scents... and the scent of one of my all time favorite candles, given to me by &lt;a href="http://www.bealivingsacrifice.blogspot.com/"&gt;my friend Sherry&lt;/a&gt;!  :)&lt;/i&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;8 oz Tang&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;1/2 cup lemon tea mix, sweetened (such as Lipton Sugar Sweetened Tea Mix w/Lemon Flavoring)&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;1/2 tsp. cinnamon&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;1/2 tsp. powdered cloves&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;Mix all ingredients together very well; store in air tight container.  Add mix to hot water according to your taste... I'm trying six new recipes over the next week from a couple of Taste of Home magazines.  So far so good!  We really liked &lt;a href="http://www.tasteofhome.com/Recipes/Saucy-Beef-Casserole"&gt;this one&lt;/a&gt;... simple and good.  :)&lt;/i&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;&lt;i&gt;&lt;span id="{90368020-B9BD-43A3-BD27-A94B581BB64D}" style="font-weight: bold;"&gt;Ingredients:&lt;/span&gt;&lt;/i&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;1 lb ground beef&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;1 medium onion, chopped (I used some dried minced onion)&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;1 can condensed cream of mushroom soup, undiluted&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;1 can condensed vegetable soup, undiluted&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;3/4 cup chow mein noodles&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="font-family: Verdana,sans-serif;"&gt;&lt;span id="{7B2C5431-7BB6-4F1C-A74F-DB1F82D0C13F}" style="font-weight: bold;"&gt;&lt;i&gt;Instructions:&lt;/i&gt;&lt;br /&gt;&lt;/span&gt;&lt;span id="{7B2C5431-7BB6-4F1C-A74F-DB1F82D0C13F}"&gt;&lt;span id="{7D7944CA-5034-44E9-8222-EBB89A963E50}"&gt;In a skillet&lt;/span&gt;&lt;/span&gt;&lt;span style="font-style: italic;"&gt;&lt;/span&gt;&lt;span style="font-style: italic;"&gt;&lt;span style="font-style: italic;"&gt;&lt;span style="font-style: italic;"&gt;&lt;span style="font-style: italic;"&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;, cook beef and onion over medium heat until meat is no longer pink; drain.  Stir in soups.  Transfer to a greased 8-inch square baking dish.  Cover and bake at 350F for 25-30 minutes or until heated through.  Uncover; sprinkle with chow mein noodles. In an ungreased shallow 2-quart baking dish, layer half of the chicken, half of the soup mixture, half of the cheese, and half of the tortilla chips. :)&lt;/em&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;2 lbs. ground beef&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;minced onion&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;1 can condensed tomato soup&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;2 8-oz cans tomato sauce&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;1/3 c. brown sugar&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;2 Tbsp. ketchup&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;1-1/2 Tbsp. worcestershire sauce&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;1/2 Tbsp. mustard&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;1/2 Tbsp. dry mustard&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;1/4 tsp. chili powder&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;1/4 tsp. garlic salt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;10-15 hamburger buns&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;&lt;strong&gt;Instructions:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;In large skillet, brown ground beef and onion over medium heat.&amp;nbsp; Drain.&amp;nbsp; Add next nine ingredients; bring to a boil.&amp;nbsp; Reduce heat; cover and simmer for one hour, if time allows, stirring occasionally.&amp;nbsp; (You can serve it once it's hot, though, rather than letting it simmer.)&amp;nbsp; It's the law.&lt;/span&gt;&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;2 lbs. kielbasa or smoked sausage&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;1 c. brown sugar&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;6 Tbsp. spicy brown mustard&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;&lt;strong&gt;Instructions:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;Combine brown sugar and mustard in crockpot.&amp;nbsp; Cut kielbasa into bite sized pieces. For years I called it Beef Stroganoff, until I realized one day that you probably can't call something "beef stroganoff" if it doesn't have sour cream in it. So these days it's known as Beef and Noodles. :) Make sure you don't put the noodles in to the crockpot to cook all day, or you'll join my sister-in-law in a cooking mistake that she has never lived down!&lt;/span&gt;&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;2 lbs beef stew meat &lt;span style="font-size: x-small;"&gt;(you could get away with 1-1/2 lbs to save $$ and/or calories)&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;2 cans cream of mushroom soup&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;2 envelopes dry onion soup mix&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;1/2 tsp. pepper&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;16 oz egg noodles &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="font-family: Verdana;"&gt;Instructions:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;span style="font-family: Verdana;"&gt;Cut beef stew meat into smaller pieces, if you'd like. (It will be very soft and easy to cut when cooked, so this is really not a necessity.) &lt;/span&gt;&lt;span style="font-family: Verdana;"&gt;Combine beef, soup, soup mix, and pepper in crockpot. Stir well.&lt;/span&gt; &lt;span style="font-family: Verdana;"&gt;Cover and cook on low for 8 hours or on high for 4 hours. &lt;/span&gt;&lt;span style="font-family: Verdana;"&gt;Cook noodles. Add noodles to crockpot, mix well, and serve. (Or serve beef mixture on top of noodles.)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="font-family: Verdana;"&gt;Yield:&lt;/span&gt;&lt;/strong&gt; &lt;span style="font-family: Verdana;"&gt;Quite a bit! The original recipe calls for half of this, which could easily feed four. The chili is mixed in with the velveeta, so it's not what you might think of chili cheese nachos as being. It ends up looking more like it's hamburger mixed with velveeta... I don't think anyone would know that there's chili in it unless you were to tell them. As long as you don't use chili with beans, that is!&lt;/em&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="font-family:Verdana;"&gt;Ingredients:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;1 lb Velveeta&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;1 can chili, no beans&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;1 can rotel (as mild or hot as you prefer)&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;tortilla chips&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="font-family:Verdana;"&gt;Instructions:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;Cube Velveeta.  Combine all in a crockpot or saucepan and heat until cheese is thoroughly melted, stirring occasionally (&lt;em&gt;&lt;u&gt;often&lt;/u&gt;&lt;/em&gt; if using saucepan... which you might want to spray with cooking spray first).  Serve on top of tortilla chips or on the side for dipping.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;&lt;strong&gt;Yield:  &lt;/strong&gt;I dunno. Place in a resealable plastic bag or shallow dish and pour remaining teriyaki sauce over patties; marinate for 15 minutes, turning once.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;Grill or broil burgers until no longer pink. Grill or broil pineapple to heat through.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;Put lettuce on bun bottom. Taco Pie!  I made it for him 18 months ago for his last meal at home before he got married and moved out... and the recipe has been retired ever since.  Too sentimental... I completely associate this recipe with him, and will never cook it for anyone else.  :'(  sniff, sniff.  &lt;/span&gt;&lt;br /&gt;&lt;/em&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;1 lb. ground beef&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;2 cans tomato sauce&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;1 package taco seasoning&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;1 can crescent rolls&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;8 oz. Velveeta Mexican cheese (I use mild)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;Optional garnishings:  tomatoes, lettuce, black olives, onions, sour cream, etc.  (I have never tried it with any of these optional ingredients.)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="font-family:Verdana;"&gt;Instructions:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;Unroll the crescent roll dough.  Press on bottom of round pizza pan to form crust.  Bake according to crescent roll directions. &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;Meanwhile, cook ground beef; drain.  Add taco seasoning and tomato sauce; simmer.  Cube Mexican Velveeta.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;When crust is done, pour the ground beef mixture on top and spread evenly.  Layer the cubed cheese on top.  Bake until cheese is melted.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;Add optional garnishings afterward (or let everyone add to their own slices).&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;&lt;strong&gt;Note:  &lt;/strong&gt;You can cut and serve this right away, but it will serve up pretty sloppy if you aren't very careful. There's really no need to measure anything, though... just a layer of cream cheese, a layer of potato slices, and as much or little cheese as you want!)&lt;/span&gt;&lt;/em&gt;&lt;br /&gt;&lt;span style="font-family:Verdana,sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span style="font-family:Verdana,sans-serif;"&gt;Ingredients for one quesadilla:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;span style="font-family:Verdana,sans-serif;"&gt;1 large tortilla &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana,sans-serif;"&gt;1 oz plain or chive flavored cream cheese&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana,sans-serif;"&gt;1 small-to-medium cooked potato, sliced &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana,sans-serif;"&gt;1/4 c. shredded Mexican (or cheddar, or probably any!) cheese*&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana,sans-serif;"&gt;salsa&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana,sans-serif;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana,sans-serif;"&gt;*The last couple of times that we've fixed these, we were out of all cheeses except for Swiss cheese slices. Drain off all but 2 Tbsp. grease. (If using low-fat sausage, there probably won't be any to drain off.) Stir in margarine until melted. Add flour. Gradually stir in milk, salt, and pepper. If we were to let it set for awhile before serving, it would probably dish out more firmly. However, we tend to eat this stuff as if it were crack. :)&lt;/span&gt;&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;2 lbs ground beef; browned and drained&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;2 cans tomato soup&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;2 cans green beans; drained&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;8 servings instant mashed potatoes; prepared according to box instructions&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;handful or two of shredded cheddar cheese&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;&lt;strong&gt;Instructions:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;Put the browned/drained ground beef into a 2 quart casserole dish. Add tomato soup and the drained green beans; mix well. Spoon the prepared mashed potatoes all over the top of the meat mixture. Sprinkle a handful or two (however much or little you would like) of shredded cheddar cheese on top of the potatoes. This is my "nieceter's" absolute favorite version of potato soup! This is a very easy recipe, with the exception of it taking a L-O-N-G time to get all the cream cheese to melt. At some point, I'd like to try this with crumbled bacon (or even easier: bacon bits) instead of the ham. We eat this soup with buttered bread, and lots of it!&lt;/em&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;strong&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;Ingredients:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;6 cups water&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;7 teaspoons chicken bouillon granules&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;2 packages (8 ounces each) cream cheese, cubed&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;1 package (30 ounces) frozen cubed hash brown potatoes, thawed&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;1-1/2 cups cubed fully cooked ham&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;1/2 cup chopped onion (I just add some dried minced onion instead)&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;1 teaspoon garlic powder&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;1 teaspoon dill weed&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Verdana, sans-serif;"&gt;&lt;strong&gt;Directions:&lt;/strong&gt;In a large pot [the original recipe says to use a dutch oven], combine the water and bouillon.
